I made oven roasted chicken with red potatoes for dinner tonight while David slept the afternoon away. He was pretty tired when he got in from his excursion last night, but was resting quite peacefully. The house smells so good right now and the food was fabulous tasting, if I say so myself.
I must say it still feels strange with just me and David eating alone together most every night. I'm sure we will both get used to this, I had better because soon I will be eating dinner all alone most nights. I've been telling myself all along it will be just fine, but will it? I am used to cooking for a big group of people so this most definitely will take some getting used too for me.
I have grown to 'love' cooking and 'like' baking. Cooking opens a whole new world of experimentation for me and its rather enjoyable and relaxing. Baking is a little less exciting for me, even though you can get quite creative with that too, I still manage to mess things up. I usually make the most mistakes baking, like two weeks ago when I made these two perfect loaves of banana bread and discovered upon my first anticipation of goodness bite, I forgot the sugar!
If you care to know how I cooked this little birdie, I basted it in olive oil and added thyme, chopped fresh parsley, course salt (sea salt). A small amount of orange juice in the bottom of the pan and some minced garlic. For the potatoes I just sprayed with vegetable oil and sprinkled a little dill on them, they were so moist and flavorful, the whole meal was!
In closing I just want to say that I hope tonight is less eventful and we are all able to get some sleep. I feel ready for bed right now, the rain is not helping the situation, it's just make me more sleepy. I will try and hold out a couple of hours longer and then we can curl up in bed to a nice episode of SVU on Hulu Plus.
