Preparations!

Tonight I am starting the process for our family dinner tomorrow. I made my dry rub for the meat and will explain a little about that process.
In the picture you can see my cut of meat which is pork spare ribs. I prepared my surface to season for a rich hickory flavor. After I clean the meat and pat it dry, I baste the ribs in extra virgin olive oil, salt and pepper. I then mix a variety of carefully chosen spices and rub it into the meat (dry rub) making sure to get both sides.
Cover in wax paper and tin foil over that to lock in the spices. Refrigerate for twelve or more hours. Tomorrow I will cut up onions and garlic to lay over the meat while I slow cook in the oven. When that is finished it will be served with a side of Sweet Baby Rays BBQ Sauce and the rest of our side dishes.
If I get time tomorrow I will try and get the rest of the prep taken and posted later. Deviled eggs just made the menu too.
Before I sigh off for the night, we went to see "Gods Not Dead" I highly recommend, it was a good movie!
